PEPPER HOTNESS RATINGS FOR DUMMIES
HOT PEPPER HEAT SCALE - SCOVILLE UNITS
Chile hotness comes from the substance capsaicin which is concentrated in the veins and flesh of the Chile, not the seeds as commonly believed.
Chile hotness has traditionally been rated in Scoville Units named after the Wilbur L. Scoville who devised the test in 1912. It used human testers whereby a measured sample was diluted with sugar water until hotness could not be detected anymore. As an example, if the sample is 1 cup of chile product and after diluting with 3,000 cups of sugar water, hotness cannot be detected, the Scoville rating is "3,000".
Nowadays, human testers have been replaced by High Performance Liquid Chromatography (HPLC).
Here are some typical Scoville ratings:

Habaneros and their kin are all types of pepper within Capsicum chinense, which is one of the five species of peppers that have been domesticated over the centuries.
There are actually hundreds of pod types within the species and Habanero really refers to just one pod type from the Yucatan Peninsula. However, in the USA, Habanero has become the common term for the entire chinense species.
In less than a decade, habanero peppers have emerged from relative obscurity to become one of the most popular "new" chile peppers in the USA. Fresh orange habaneros are found in many supermarkets. Fresh Red Savina™ is still limited to a few gourmet markets but is rapidly gaining in popularity and has become the pepper of choice for the real hot pepper aficionado.
There are a variety of common names for chinense varieties and we have listed a few names found in various locales:
